WE, the Muslim student body of the University of Connecticut, would like to express our desire for continuing the excellent service at the Halal Station in Gelfenbien Commons with Tom Mitchell as the Head Chef for the following reasons:
1. He has done significant research and put forth his personal time to meet our religious needs.
2. He has shown great care for preparing Halal food by not only using Halal meat, but also other materials that come in contact with the meat during processing.
3. He has experience in handling the preparation of food during the holy month of Ramadan.
4. He has acquired irreplaceable knowledge that will take someone else time and energy to obtain.
5. He has been continuously improving the menu items to cater to many of the different cultural backgrounds of various students.
6. He knows many Muslim students on campus, and we, the undersigned, have come to know and trust him as the Halal Chef.
WE, THE UNDERSIGNED, request from Dining Services that Tom Mitchell retain his position as Head Chef of the Halal Kitchen for the reasons mentioned above.
