The Gingerbread Ice Cream Sandwich was made by Walls and consisted of Vanilla ice cream sandwiched between two gingerbread biscuits. But despite good reviews it disappeared after just one Christmas. There was even an Ed Sheeran edition which the brand seem to have released to coincide with Sheeran's visit to Ireland labled as 'Ginger-Ed Sandwiches'.
